Anticipation and excitement over the potential food providers in the Davis Center has grown since the taste
test in April of 2006 when 18 local and national vendors demonstrated their
culinary talents and UVM students, faculty & staff voted for their
favorites. Since then, the Davis Advisory Committee (DAC) and University
Dining Services (UDS) have evaluated proposals for the two
“outboards” adjacent to the second floor Marketplace &
Brennan’s Pub & Bistro on the first floor.
Each vendor’s proposal addressed areas of sustainability, menu, hours of service, price, customer service and commitment
to social responsibility. Final selections were completed December 15,
2006, and we are thrilled that Ben & Jerry’s, New World Tortilla,
and WOW Café & Wingery have agreed to become
partners in the Davis
Center. Discussions
are also underway with Sakura for a made-to-order Sushi concept in the
Marketplace.
New World Tortilla currently operates two locations in Chittenden County
and is a local favorite. New World is committed to using fresh Vermont products
whenever possible & will feature their value-oriented burritos and
Tacos including their special Thai Chicken wrap with spicy peanut ginger
slaw.
Brennan’s Pub & Bistro will feature the WOW Café and Wingery. UDS in partnering with the Vermont Fresh Network is
sure to enhance WOW’s signature salads,
wraps, sandwiches, burgers, fajitas, quesadillas, tenders, and, of course,
wings. Stop in first thing in the morning and grab a Speeder & Earls
coffee and Brueggers Bagel on the way to class or
swing by in the PM for dinner with a fresh smoothie, milkshake or a local
microbrew (for those of age). Student programming, live music, pub quiz,
sports nights will make Brennan’s the place to be late night.
